‍Las Vegas is set to welcome an exciting new addition to its culinary scene with the opening of Bramàre, an inspired Italian fine dining restaurant debuting at The Collective (3900 Paradise Road). This 2024 venture from Batch Hospitality, led by industry veterans Constantin Alexander and Evan Glusman, brings decades of expertise from iconic Vegas establishments like Piero’s Italian Cuisine, Hakkasan Group, and Table 34.

Bramàre, meaning "to crave" in Italian, offers a sensual, engaging atmosphere where elevated Italian cuisine and world-class cocktails come together for an unforgettable dining experience. Executive Chef Joe Valdez III takes a modern approach to Italian classics, featuring house-made pastas, bold flavors, and unique small and large-format dishes. Highlights include Swordfish Milanese with caviar sauce, Braised Beef Cheek Pizza with goat cheese and potato, and Wild Boar Ragu Tagliatelle.

Beyond the food, Bramàre’s cocktail program, co-created by Alexander and Lead Mixologist Oscar Takahashi, is a standout. The menu features seasonally rotating, artisanal cocktails made with house-infused spirits, fresh ingredients, and creative garnishes. Signature drinks include "The Bragato," a nitro-infused tableside affogato, and "You Makin’ A Me Caprese," blending Moletto Tomato gin with balsamic agrodolce, basil, and cucumber.

Bringing a fresh late-night dining experience to one of Las Vegas’s best off-Strip locations, Bramàre is open Tuesday through Saturday from 5 p.m. to 1 a.m., offering a refined yet lively destination for romantic dinners, celebrations, and indulgent late-night bites.
