The industry veterans behind Piero’s Italian Cuisine and Table 34 have made a move into the thriving Collective shopping center on Paradise Road. Constantin Alexander and Evan Glusman’s latest venture, Bramàre, is a fine-dining Italian restaurant that has joined Middle Child at The Collective, near the Las Vegas Convention Center. The menu boasts standout dishes such as pan-fried swordfish Milanese in a caviar sauce, braised beef cheek pizza topped with dollops of goat cheese, and toast layered with ’nduja, caciocavallo cheese, and caramelized onions.
Bramàre's drink offerings are equally impressive. The cocktail menu features a unique twist on the caprese salad, blending tomato gin with balsamic vinegar, strawberry, lemon, basil, and cucumber. Guests can also enjoy a nitro-infused affogato, served tableside. With sleek marble finishes and a dark, moody interior, Bramàre is the perfect spot for late-night dining, staying open until 3 a.m.
