Beyond the Strip: Bramàre Brings Bold Italian Flavors to Paradise Road
Hidden in the shadows of Vegas’ glitzy Strip, where neon and grit meet, a place called Bramàre is making some noise. It’s not your average Italian joint; it’s raw, soulful, and a little bit sexy—like a place that knows its way around a late night. Part of The Collective, the newly minted culinary haunt on Paradise Road, Bramàre feels like stepping into a forgotten corner of Italy, and its story starts with Batch Hospitality's trio: Evan Glusman, Constantin Alexander, and chef Joe Valdez.
Chef Valdez opens with a hell of a statement. Take the deceptively named “Toast.” It’s no polite crostini; it’s unapologetically piled with spicy ‘nduja, caramelized onions, and caciocavallo cheese, crowned with pecorino that whispers, “Let’s get serious.” The funghi fritti—fried hon shimeji mushrooms with a punchy garlic-chili sauce—is lighter but doesn’t skimp on flavor. These starters don’t just say hello—they slap you awake.
On to the pastas. Every last noodle is made in-house, which says a lot about Valdez’s Italian roots and even more about his commitment to the craft. The Creste de gallo, swirled in a smoky mezcal pomodoro, is earthy and unexpected, like a good adventure. Then there’s the tagliatelle with wild boar ragu—rich and grounding, with sage tying it all together in a way that only feels right after a long day.
Then, there’s the pizza. Chef Valdez doesn’t drench his pies in sauce, letting ingredients speak instead. The Anacardi is a standout, with Calabrese salami, briny olives, and cashews—a playful, family-inspired nod to the kind of food that makes you feel at home, even when you’re miles away from it.
And the cocktails? Constantin Alexander, a Hakkasan alum, knows his way around a glass. Nordic Wonderland, with its Aquavit and floral notes, is a cool sip of Northern European summer. The Sonora Signora, meanwhile, mingles Mexican tequila and Italian amaro, dressed with Thai makrut lime leaf—a reminder that, in the right hands, borders mean nothing.
Bramàre has only been open a couple of months, and it’s finding its feet. But when you’re sitting there, drink in hand, and that black garlic-laden broccolini hits the table, any thoughts of imperfections fade. Bramàre isn’t just another Italian place. It’s a late-night gem, gritty and unpolished in all the best ways.
